Easy Organic Spiced Rum Cake Recipe Ft. @TOPOdistillery

Whenever there is any type of potluck party or request for guests to bring a dish, I know what I am bringing: RUM CAKE. It is a crowd pleaser especially around the holidays! This year, I am spicing things up a bit and using TOPO Organic Spiced Rum.

What is the difference between rum and Topo’s Spiced Rum?
Per their website, the rum… “has flavors of the coastline: allspice, vanilla, orange peel, peppercorns, cinnamon and clove. It’s a marriage of the finest organic botanicals with an incredibly smooth rum. We make a tasty white rum and then use a mortar and pestle to grind spices to add more flavor. You can smell and taste the difference.”

I absolutely enjoy TOPO Organic Spiced Rum in various cocktails also such as the Rum Cider, Colony Records and even a cocktail recipe that I shared here on my blog that was inspired by the popular Disney Dole Whip Drink. This is the first time I am trying it in the following Easy Rum Cake Recipe (that is shared all over Google).

Easy Rum Cake RECIPE

Rum Cake
___________
1 cup chopped pecan or walnuts
1 pkg. (2 layer size) yellow cake mix (I used Dunkin Hines)
1 pkg. Jello vanilla instant pudding and pie filling
4 eggs
1/4 cup vegetable oil
1/2 cup water
1/2 cup rum ( TOPO Organic Spiced Rum)

METHOD:
1. Sprinkle nuts evenly in bottom of 10 inch fluted tube pan that has been greased & floured ,or sprayed with non stick vegetable cooking spray.
2. Combine remaining ingredients in large mixer bowl.
3. Blend and beat at medium speed for 4 minutes
4. Pour batter into pan. Do not under-bake
5. Cool in pan 15 minutes
6. Prepare glaze
7. Invert cake into serving plate, prick over with cake tester or wooden pick.
8. Pour warm glaze over warm cake

GLAZE: combine 1 cup sugar, 1/2 cup butter or margarine and 1/4 cup water in saucepan.
Stir until mixture comes to a boil and continue boiling for 5 minutes, stirring constantly. Stir in 1/2 cup TOPO Organic Spiced Rum, bring just to boil. Remove from heat .

**SobeSavvy Tip: Make this cake a day or two before serving. DO NOT TRY TO MAKE THE SAME DAY AND SERVE THE SAME DAY. While it’s true the vanilla pudding keeps the cake moist, and rum goes in the cake and in the glaze, you need a day or so to let the rum sink in. Cover it with aluminum or plastic and if you like, mist it with more rum daily or right before serving. Don’t like nuts? Try it with toasted coconut.

Voila! You now have a moist, yummy, delicious, Organic Spiced Rum Cake to enjoy with family and friends! I can’t wait to share at a Friendsgiving party I am attending this weekend and hope you are inspired to bake one yourself this holiday season.

In celebration of warmer temps in NC and Mother’s Day weekend, I plan to host some Mom friends on my outdoor patio for a fun, ‘Cheers to Mom‘ celebration! I like to create speciality drinks when I entertain and to me, nothing says summer is near more that a good rum cocktail. I have been seeing all these Disney Dole Whip recipes and decided to try one of my own using NC’s own award winning organic spirits: TOPO Carolina Spiced Rum!

The Spirit

Admit it, the words “organic” and “liquor” do not usually exist in the same sentence. Not anymore. After being a fan and consumer of TOPO Organic Spirits [they offer a whiskey, vodka, gin and moonshine], I was excited when my friends at TOPO sent a sample of their new release, TOPO Organic Spiced Rum. After living in Miami for almost 20 years and attending several Rum festivals [like the Miami Rum Renaissance Festival], I became somewhat of a rum expert. dark rum, light rum, Haitian Rum, Jamaican rum, Puerto Rican rum. I have had them all at one time or the other. What I was not familiar with however was rum from North Carolina!

The Cocktail

More than one of my Disney Social Media Mom friends [that I recently got to connect with at the Disney Social Media Moms Conference On The Road Celebration in Miami] has made me aware over the years of a special concoction they had enjoyed at one of the Walt Disney World Theme Parks called “Dole Whip”. It is sometimes in the form of a soft serve ice cream or as a non alcoholic beverage. However there are some places in the park that will serve this as a rum infused tropical cocktail, sort of like a grown up smoothie! I have not had one yet, but I am on a mission to get there soon to enjoy one or two for myself. Until then, I thought I would DIY my own Disney Dole Whip Rum drink and call it a ‘Cheers To Mom’ Cocktail.

The Recipe

Dole Frozen Pineapple Chunks
Vanilla Coconut Milk
Topo Organic Spiced Rum 2 TBLS of White Granulated Sugar
Ice Cubes

Blend the above in a blender at high speed for 30 seconds and sample. Adjust any ingredients to taste. I added a little more rum because well, more rum equals more fun! Top of with Whip Cream [optional] and enjoy!

Hey Rum Lovers! Now there is another reason to head south to Key West,FL. The Hemingway Rum Company Distillery & Experience Center is opening to the public, beginning at 9:00am on Saturday, May 20, 2017. 

Inspired by Ernest Hemingway’s Spirit of Adventure, the Makers of  Papa’s Pilar® premium sipping rums, offer Rum Enthusiasts a New Adventure Destination. Yesterday invited media got a sneak peek of this new facility and here’s a link to some photos:

Nestled in the heart of Key West at 201 Simonton St. (the corner of Greene St. & Simonton St.), the new Rum Distillery & Experience Center pays homage to the legendary adventurer who once proudly called Key West home. The building once served as an all brick tobacco warehouse built in 1878 by Irish bricklayers. Having completed a three-year renovation, the over 8,000 sq. ft. facility will support Papa’s Pilar rum production, an Experience Center, a Tasting Room, Trading Post, and eventually a rentable event center. Visitors can view a 350-gallon Hamilton Pot Still, with a custom-made reflux column, that can produce up to 80 gallons of rum per day. Guests will also be treated to an interactive “scent display,” which allows them to smell the active ingredients in each expression. Unique attractions throughout the tour pay tribute to “Papa” as Hemingway was known, including a swivel picture wall and replica of his Pilar boat affixed in the ceiling’s center rafters. Following the tour, patrons will be provided a sampling experience of Papa’s Pilar dark and blonde rums in the facility’s Tasting Room, which includes a Hemingway inspired bar top, filled with newspaper clippings, photographs and other memorabilia.

Carlton “Carl” Grooms, Key West Director of Operations, will manage the production of the award-winning rums, with the help of four full-time managers and 40 part-time employees, whom are all local Key West residents. An adventure-seeker and rum enthusiast himself, Grooms co-founded the International Rum Council and served as co-author of the book, “Rum & Contemporary Cuisine.” Carl serves on the Board of the Navy League, Key West Council, and the Key West Art and Historical Society.

“We’re excited to have created both a destination that will serve as the physical heart and soul of our brand, as well as an asset for the city of Key West,” said Grooms. “Our guests will be truly engaged and amazed with this unique experience. A trip to Key West will no longer be complete without a visit.”   

  • Tours are available daily from 9am-6pm. 
  • Tours are self-guided and do not require reservations as guests are encouraged to explore like Hemingway himself.

 In addition to the tour attractions, guests can visit the Trading Post to purchase adventure gear, bar accessories and one-of-a-kind Hemingway Rum Company apparel only available in Key West. A designated “locals corner” will allow various Key West merchants to showcase and sell their work.

“Of all his worldly travels, Ernest Hemingway chose Key West to call home,” said Lindsey Kops Mundy, Papa’s Pilar National Brand Director. “And it’s here that we chose to celebrate him and Papa’s Pilar, the rum inspired by his spirit of adventure.”

Papa’s Pilar Dark & Blonde rum varieties are hand-selected from ports-of-call in the Caribbean, Central America and Florida for their age, character and maturity, and then blended and solera aged in our proprietary process which includes Bourbon barrels and Spanish Sherry casks for the Blonde expression, and Bourbon, Port Wine and Spanish Sherry casks for the Dark Rum.

Today is National Rum Day {Yes, it really is. Google it if you don’t believe me !} So we here at SobeSavvy decided to come up with the perfect cocktail to celebrate this annual Rum holiday. We always use Gubba Rum for life’s celebrations big or small! There are a lot of choices but Gubba stands out for their quality and amazing smooth taste.

This bottle is currently on a 2nd production run, which is even smoother and richer tasting than the original !

Squeeze Fresh Lime Juice

While tasting my way through literally dozens of rum producers I encountered few very memorable ones. Gubba Rum being one of the few that left a lasting impact on me.http://gubbarum.com Besides a great name , Gubba Rum has been the only rum to transport me back to a glorious week I spent 6 yrs ago in St Barths F.W.I. In that part of the carribean each meal ends with the proprietor setting a bottle of homemade vanilla rhum at the table as a thank you for coming.

Memories of vanilla rum in the left hand and a Cuban cigar in my right brings a grin on my face everytime. Gubba’s Gold rum is infused with natural vanilla. Their Silver rum is infused with coconut. After a particularly hard week I decided to crack the seal on the Gold. I first had it neat and sipped my way through a magazine. So smooth and so vanilla. Next up I decided to try a classic take on rum and Coke. Except this was a vanilla coke. A perfect iconic drink made all the more perfect using Gubba Rum and having it on my balcony in Miami Beach. The vanilla rum blended with a little classic Coke danced a perfect pallette harmony ballet. Can’t make it to St Barths ? Do the next best thing. Get Gubba.

This weekend SobeSavvy.com joined other Rum enthusiasts at the Miami Rum Renaissance Festival! At the Grand Tasting event, visitors sampled more than 200 fine rums produced in the Caribbean islands while participating in cocktail competitions, strolling through exhibits on the island lifestyle, and attending rum seminars.

As rum collector and enthusiast Robert Burr sensed what he termed the “awakening of rum” in 2005, he decided to direct his passion toward educating the community. Drawing from an earlier career in magazine publishing, he compiled a list of 100 of his favorite rums each year into a free guide, which he gave to local liquor stores. As he developed connections with other enthusiasts and tasting judges, he formed the International Rum Expert Panel, an organization of 36 cane-spirit lovers from around the world. He gathers the majority of these experts in Miami Beach each year for the Miami Rum Renaissance Festival, a celebration of the libation’s international varieties.

Through the festival’s schedule of events, Robert aims to honor iconic spirits while also featuring lesser-known rum makers that guests might not otherwise find without finding and deciphering Blackbeard’s long-lost treasure-map pajamas.
Held at the opulent DoubleTree by Hilton, the annual event has grown to include hundreds of rums hailing from countries such as Jamaica, Guatemala, Guyana, Haiti, and Puerto Rico. As they mingle in spacious convention halls, visitors navigate a labyrinth of bartenders and brand ambassadors proffering island apparel, art, and books. Industry experts expound on the history, origins, and childhood fears of the libation during weekend seminars and bartender competitions. Attendees also revel at a two-day tasting exhibition, late-night parties, and VIP events at various Miami venues.
