Celebrate #NationalCookieDay with @NocciolataUSA @RigoniAsiagoUSA Dairy Free Hazelnut Spread Recipe

​December 4th is National Cookie Day and with the holidays upon us and cookie swaps quickly approaching, I thought I’d share this recipe for Dairy Free Chocolate-Hazelnut Sandwich Cookies ! The star of these cookies is a brand-new dairy-free (and 100% vegan) organic chocolate hazelnut spread called Nocciolata Dairy Free.

Each batch of Nocciolata Dairy Free takes 36 hours of artisanal preparation, which combines top-quality hazelnuts, cocoa and cocoa butter, environmentally-responsible cold-pressed sunflower oil, natural vanilla extract, and raw cane sugar. It contains no palm oil (which is high in saturated fat and whose cultivation devastates the environment), hydrogenated fats, artificial colors, aromas or additives. This product is USDA Organic, Non-GMO, Dairy Free, Vegan and Kosher Certified, Gluten Free, and full of flavor ! 

I  whipped up a batch of these cookies using the following recipe:                

 Dairy Free Chocolate-Hazelnut  Sandwich Cookies

Makes about 10 large cookie sandwiches

Ingredients
1/2 cup walnut halves
1/2 cup sliced almonds
2/3 cup unsweetened coconut
2 1/4 cups powdered sugar
1/4 cup plus 1 heaping tablespoon unsweetened cocoa powder (I prefer natural but you can use Dutch process)
large pinch salt
1/2 cup dark chocolate chips
3 large egg whites, at room temperature

Instructions

1.       Preheat oven to 325°F.

2.       Spread the walnuts on a baking sheet and bake for two minutes. Add the almonds to the tray and bake for 3-4 minutes more until the nuts are fragrant and just barely golden. Transfer to a bowl to cool. When cool enough to handle, break the walnut halves unevenly into smaller pieces.

3.       Spread the coconut on the baking sheet and toast it for 3-4 minutes until slightly golden. Add it to the bowl of nuts.

4.       Whisk together powdered sugar, cocoa powder, and salt.

5.       Add the walnut-almond-coconut mixture and the chocolate chips and stir to combine.

6.       Add the egg whites and stir just enough to moisten all the dry ingredients.

7.       Spoon about two tablespoons of batter onto a parchment-lined baking sheet, leaving several inches between cookies.

8.       Bake for 12-14 minutes, turning the baking sheet once.

9.       Once cooled, spread Nocciolata Dairy Free chocolate hazelnut spread between two cookies and assemble the sandwiches. 

These cookies were a tasty treat for me and my little one! I was happy to try the dairy free option but I am a huge fan of the Rigoni Di Asiago Nocciolata Organic  Hazelnut spread made with cocoa and milk ! (I like to add it to oatmeal drizzled on strawberries, rasberries or bananas..so good!) I also have been known to tie a ribbon around a gourmet jar of this rich creamy chocolate hazelnut spread. Whether its the Dairy Free spread or  this one, they both make a lovely hostess gift!

Hello November! It’s time to start preparing for the holidays. Some feel this time of year can be stressful and expensive, but it does not have to be. Something I like doing to relieve stress is cooking with my family and for my family. So when I heard of HelloFresh offering a convenient and easy way to cook healthy meals at home, I wanted to try it.

What is HelloFresh ?  It’s a weekly recipe-kit delivery service where you get to choose from delicious recipes and receive a box full of fresh ingredients at your door for you to cook at home. Here is what my box looked like:

You can choose from 3 Meal Plans: Classic, Veggie or Family Plan, which is what I received,  filled with family friendly ingredients. It came with the following 3 handpicked recipes: 

…and a cocktail recipe card was included also! 

Each meal recipe card is yours to keep. It gives a description on the front and list of ingredients, recipe details and nutrition per person info on the back. I liked the size of the cards which makes reading the recipe easy. 

Now let’s talk about the dishes. First meal made was the Shrimp Lo Mein. Out of all 3 recipes, this was the families favorite. It had all the flavors of Chinese takeout without the high fat and sodium. Plenty of shrimp were provided and fresh produce. They say variety is the spice of life but I say sauce is the spice of life!  I really enjoyed the soy and hoisin sauce in this dish giving it a balanced sweet and salty flavor.

Next meal was the Baked Parmesan Chicken Strips. This one was a good one to get all family members involved. I had my daughter washing produce and my husband chopping while I breaded the chicken strips with toasted panko and parmesan cheese. My least favorite thing about this meal is that string beans were being repeated. Since they were already featured in the Shrimp Lo Mein meal, it would have been great to pair with a different green vegetable. This meal was adult and kid approved because we all loved the rosemary potatoes and dipping the chicken strips in the homemade honey mustard dressing was fun. Lastly, we had the Honey and Orange Chicken Jambalaya.  This Creole dish is served with tomato rice and was given a burst of citrus flavor by adding orange zest. My daughter thought it was too spicy, so this was her least favorite. All the meals were nut free and took about a total of 45 mins to make.

Maggiano’s Little Italy may be known for its delicious pasta dishes but did you know they had some amazing seafood offerings ?! Well they do…that’s why for October also known as National Seafood Month , I made plans to celebrate my favorite cuisine “Seafood” at a restaurant known for making celebrations special, Maggiano’s Little Italy !

For lunch, I headed to the restaurant’s Durham,NC location at The Streets of Southpoint. If you have never been to one of the 51 locations in 22 states , here is what you can expect:

  • A warm and friendly atmosphere. Semi-upscale, yet relaxed.
  • Homemade,  Italian-American cuisine both classic & contemporary
  • Generous portions..can you say leftovers?!
  • Delicious dishes for the whole family…so yes bring the kids!

Our waiter was friendly and eager to share what his favorites were on the menu. Since I had seafood in mind, I was pleased to see the many options available!  To start, we shared the Steamed Mussels served Tuscan Style.It was a generous portion of Prince Edward Island Mussels served with white beans, parsley and sundried tomatoes. Be sure to save some of the table bread to dip in the broth, it’s that good.

Next was Spiced Shrimp, Bacon, Roasted Peppers & Corn Fondue from the Bruschetta Bar. Maggiano’s allows customers to customize their own bruschetta tasting..how unique! You know what they say, good things come in small packages and this little bite left a big impression. So delicious!

For my entree it was recommended to try the Lighter Take Shrimp Fra Diavolo. What makes it “Lighter Take” you ask? For 370 calories, you get a plate full of flavor with just half the portion of the normal Shrimp Fra Diavolo. It is hand cut fettuccine, pan-seared shrimp, garlic, tomatoes and Diavolo Sauce. My plate was cleaned..so no complaints. After talking with the Chef who came out to see how we liked everything, I wished I had got the Salmon Oscar after hearing his mouth-watering desciption! He also advised the food is made from scratch everyday and dishes can be modified to meet guest’s special diet needs. Maggiano’s offer gluten-free pasta and all sauces are handcrafted without gluten-containing ingredients. 

All in all, our dining experience was a memorable in a good way. Flavorful and Fresh are two words that come to mind. Whether you are celebrating an anniversary, graduation, birthday, or National Seafood month like me, consider Maggiano’s Little Italy ! Your tastebuds will not be disappointed!

Tacos and Tequila are a match made in taste bud heaven and Chili’s pairing is awesome!

Wine lovers rejoice ! September is NC Wine Month…a time to celebrate the state’s $1.7 billion wine and grape industry. “North Carolina is home to more than 180 wineries, and each one is as unique as the wines it offers,” said Agriculture Commissioner Steve Troxler. “On top of that, the state has 525 grape growers from the mountains to the coast.”

We here at SobeSavvy.com kicked off our celebration with some muscadine wine. Not just ANY wine but Duplin wine. It is the world’s largest Muscadine winery and the oldest operating winery. My first introduction to Duplin wines was when a dear friend bought over a bottle as a housewarming gift when we moved to NC over a year ago. I have been a fan of the “cool,sweet,easy” wine ever since ! 

Duplin was established in 1975 in Rose Hill, NC and they have a fiercely
loyal following, not only in the south but nationwide. Sweet Muscadine wine is
what they make and that is what their customers love! Recently we had a chance to review two of their wines: Carolina Red Reserve and Sippin’Sweet Muscadine 

Carolina Red Reserve was up first. This is what I would call a “semi
formal” choice. The bottle itself is beautiful, so our expectations were pretty
high. We had this one afternoon at a sit down lunch. It was lush and very
smooth. It paired well with our seafood entree. We even used our custom Duplin
wine glasses we received when we did the tour at their N.Myrtle Beach winery location over the summer.

A few days later we decided to try out their Sippin’ Sweet Muscadine wine.
It’s hand bottled exclusively at their N.Myrtle Beach location in a classic
mason jar. A much more casual affair than the Carolina Reserve ! We had it with
some take out and it was awesome. Light and mildly sweet . We had to slow down
our sips which had turned into gulps! This is a the perfect choice for outdoor
patio BBQ or a Netflix and chill night at home. Sure to be a favorite of
everyone’s this Sippin Sweet is a bonafide winner.


Duplin has a variety of muscadine wine choices, so there is something for
everyone. They revel in not being a “snooty” wine. They like for folks to use
the “PDR” method when consuming their products. Pour…Drink..Repeat !

Duplin Winery is one of the many wineries offering a variety of special events in September, from wine tastings and grape stomps to music festivals and farm-to-table dinners. On Sept. 10  Duplin Winery is holding their annual event : Duplin Winery’s Grape Stomp in Rose Hill  I am sad to miss it but plan to make a trip out to that winery soon as I hear they have a fabulous bistro as well !

Summer for Baltimoreans means two things. Humidity and steamed crabs. Both were in abundance last week when we visited Phillips at the world famous Inner Harbor. We dined alfresco on their pier “Crab” deck adjacent with their regular restaurant.

We started off by enjoying a few of their happy hour specially prices drinks, like white Sangria! We also enjoyed a half dozen of oysters that they harvest themselves. Their Happy Hour $4 cocktails and specially priced apps run Mon-Fri between 4pm and7pm.

Some friends and family joined us for what can only be described as the worlds most incredible Bloody Mary. It was delicious and came in a HUGE Quart sized glass container.

While that by itself was amazing, it was what the bloody mary was topped with. Steamed crabs, steamed shrimp, chicken wings and potatoes !! You read that correctly. Phillips calls this their “Crab Feast Bloody” !! Enough for the whole table !!

It is quite a production and comes balanced like a tightrope walker in fish netting and all !! The waiter assured me it would not fall over , just be careful taking it all apart ! All heads on the deck turned once folk saw this gargantuan meal of a bloody mary making it’s way to our paper topped picnic table !!

My 5 year old didn’t know what in the world to make of this “meal”.

It was amazing. The crabs, shrimp and chicken soon began to dissappear as did the perfectly boiled potatoes. Slowly the bloody mary level starting to drop also !! My mom simply LOVES Bloody Mary’s and she was a big part in assisting in it’s demise !!

Hot weather, Hot Crabs and Ice cold Bloody Mary. THAT ,my friends is what summer is all about.

Next trip to Phillips, try something new, something big, something HUGE . Try the Crab Feast Bloody !

Summer Days are for Beers and BBQ..throw in a live band and you have a fun foodie celebration! Beginning July 29, Carowinds fires up the grill for its Second Annual FOOD AND BEER FESTIVAL: BANDS, BREWS & BBQs !

It will be held every Friday, Saturday and Sunday from July 29 through August 14 from 11 a.m. – 7 p.m. and is included with park admission. On Sunday, SobeSavvy.com joined other foodies at this festival known for its good food, good beer, good music and good times! 

As soon as we arrived at Carowinds, we just followed the smell of barbecue to food booths near Harmony Hall. I was happy to see such a variety of smoked meats paired with Chow Chow to choose from ! Park goers got to sample everything from beef brisket (my personal favorite! So tender and flavorful) to turkey wings to duck, and top it off with one of many variations of sauces ranging from sweet to tangy to mustard and downright vinegar. We tried a blueberry chipotle that was amazing!

To purchase beer or food for Bands, Brews and BBQs, guests bought tokens from a token booth inside the park located near Harmony Hall. Guests 21 years of age or older were able to choose from an amazing selection of craft beers from several Carolina breweries. Nothing goes better with barbecue than a nice, cold brew! And for dessert? Some good ol’ homemade banana pudding!  We sat down and chowed down while listening to local bands play on the patio just outside of Harmony Hall.  And inside the air conditioned Harmony Hall , we got to see more entertainment: The Lunch with the Peanuts Gang! If you haven’t seen Snoopy and Charlie Brown get down, this is your chance.

My family of 3 stayed in a King One Bedroom Suite , which had a sleeper sofa couch in the living area with its own TV, a full kitchen as well as a great privacy factor between the living space and bedroom area. On Monday, July 25th , McAlister’s Deli celebrated its Grand Opening of its newest location at 5505 Capital Boulevard in Raleigh, NC ! As a North Raleigh resident, I was happy to learn McAlister’s Deli is now open and serving the community. 

Known for serving “American Regional favorites” with a smile, this restaurant serves good food and great tea to wash it all down with. Did you know there was a cult following of “tea freaks” who love McAlister’s Famous Sweet Tea?! Well, I have a confession..my name is Leslie and I am a tea freak.

Yesterday I went to the new location in Raleigh with my husband and daughter. While I was familiar with their beverage menu, I had never tried their food. Their menu is not your typical deli menu because it offers so much more than just hot/cold sandwiches. For example, McAlister’s serves nachos for starters, entree salads, giant stuffed potatoes known as ‘Spuds’, desserts and they offer a variety of vegetarian options. 
For our almost 5 year old foodie, we ordered from the kids menu. Her choice of mac & cheese included a drink (she loved the strawberry lemonade), a side item (fruit cup was selected) and a treat (graham crackers).  The Just For Kids menu is suitable for kids 12 and under and for $3.59 it’s a great value !

My husband was in the mood for a good sandwich, and by the looks of the menu he came to the right place. Hot Sandwiches, Grilled Sandwiches,Classic Sandwiches, Club Sandwiches..OH MY ! He went with the Spicy Southwest Chicken Griller and opted to substitute the baguette with a croissant. In my opinion, (yes, he thankfully offered me to have a bite ) it was not too spicy but oh so flavorful. It was served with a pickle and a choice of side (he got chips).

Speaking of spice, variety is the spice of life and McAlister’s Deli has a ‘Choose 2’ option for those of us who loves variety! I went with a cup of potato soup and their seasonal pecan berry salad. It was so good, especially once I added gorgonzola cheese to it. And of course with me being a tea freak and all, I ordered a peach sweet tea and wildberry tea. Very refreshing! 

We also enjoyed a sweet ending to our meal by trying two of their desserts: A fresh baked sugar cookie for her (she read the word cookie on the window before we even got in and thought she could have that for dinner, thanks McAlister’s Deli) and a brownie for us.

From the smiling greeter at the door to the delicious food we were served, our first dining experience with McAlister’s Deli Raleigh/Capital Blvd was enjoyable and filled with tasty memories ! We will definitely be back.

Battle 4 of The Got to Be NC Competition Dining Series, highlighting the best of the state’s food, agriculture and culinary talent, kicked off last night in Raleigh and SobeSavvy.com was there for a fabulous, foodie fun night out! 
The event was held in downtown Raleigh’s City Market in the building that is now 214 Martin Street. It is a very unique event space that also serves as a Pop Up Restaurant for hire! Each table was beautifully decorated with candles and red and black linens from Alsco. Cocktails, wine and beer were available for purchase thruout the evening. Servers started us off with warm bread and butter. But not just any bread..we enjoyed artisanal breads from La Farm Bakery. The white chocolate baguette was a favorite at the table and we all tried hard not to fill up on that before the courses started! 

This was my first dinner battle and as a fan of such food shows like IronChef and Chopped , I was very excited to be able to partake and ‘be the judge’ last night. Host/Director of Competition Dining, Jimmy Crippen explained to guests that we will get to to enjoy and vote on six courses without knowing which of the two teams of three Chefs created them. We were all able to cast our votes by submitting our ballots via smartphone. The whole process of voting was very cool and high tech! This was unlike any other dinner experience I have ever had!
Last night’s preliminary round was a “Ham & Jam” battle between Team Scratch Mavericks and Orange Crush and featured 2 secret ingredients: Goodnight Brothers Country Ham Thin Sliced Dry-Cured Ham and Norm’s Farms Elderberry Jams & Extracts.
